Chunky Guacamole Recipe

I used to hate chunky guacamole. Really, I hated all guacamole. I thought avocados were gross and squishy and you couldn’t get me to touch the stuff.

Then about a year ago, I was searching for recipes for healthy eating. Avocados were in everything I saw. They were on toast, on burgers, on PIZZA! It just looked bad and weird.

My husband and I frequent a local Mexican restaurant and guacamole always comes on the side. I would always give my scoop of guac to him and he would eat it up. I wondered…. should I give guacamole another chance?

I tried several guacamole recipes, ingredients, seasonings, and all of them were ok but I discovered what I liked and what I didn’t like. I didn’t like the strong seasoning packets that overpowered the dish. I DID like a large amount of onion because it made it chunky and tasty.

After many guacamole nights, I perfected the guacamole thing. We eat this recipe on tacos, burritos, or just by itself because it is delicious!!

Finding the correct amount of guacamole to make is a tricky game, because if you make too much it does not keep! It gets all brown and gross. Here’s my rule of thumb:

If you are making it for a main dish, I would suggest using 2-3 avocados a person because this stuff goes fast. As a side dish you can use about 1/2 – 1 avocado per person. And as a topping you’ll be good to use 1 avocado for 3-4 people.

This is CHUNKY guacamole so you want your avocados on the slightly under ripe side (no brown spots too so that’s a plus). If it is overripe then it gets too smooth and I personally like the chunky version way better.

How to Make Chunky Guacamole

Ingredients:

⁃ 5 to 6 avocados

⁃ 1/4 – 1/2 small red onion

⁃ 1 Roma tomato

⁃ 1 1/2 tablespoons of finely chopped cilantro

⁃ 1/2 lime

⁃ 1 teaspoon of salt
