I’m a sucker for spinach artichoke dip! It’s the first thing that catches my eye on the appetizer menus at restaurants. This dump-and-go Instant Pot spinach artichoke dip is so easy and delicious that I now get my fix without having to leave home!

I have served this dip at events, family gatherings, and Super Bowl parties with much success. I’ve never gotten to bring any home!

What makes this recipe so easy is you can place all the ingredients in the pot itself, without having to worry about a springform pan or pot-in-pot recipe.

Once you finish the recipe, simply spoon the dip into a cute bowl or serving dish and serve with chips! We’ve also served it with carrots and other vegetables, and it was a big hit!

One step I would encourage you to follow is the *optional* Step 1! We have tried the dip with the large quartered artichokes pieces, and they are not great for dipping.

By chopping them into smaller pieces, guests can more easily dip the chips without pulling out a chunky piece of artichoke. It also helps to distribute the flavor of the artichokes throughout the whole dish!

I made this Instant Pot sausage tortellini soup using my Instant Pot Duo Mini, which holds 3 quarts! This recipe could easily be doubled for a 6-quart Instant Pot or bigger.

Substitutions

Frozen spinach: Can be substituted with fresh spinach.
Mayonnaise and Sour Cream: Either can be substituted for the same amount of cream cheese.
Monterrey Jack: I often change this out for the fiesta style blend of shredded cheese!
Chicken Stock: You can substitute this with a chicken bouillon cube and water. Instead of the broth, use a 1/2 cup of water and 1/2 a bouillon cube.

Storing the Spinach Artichoke Dip

Our dip is great in the fridge for up to 2 days. If reheating, just add a dash of sour cream or broth before reheating to bring it back to desired consistency.

Although we have attempted to freeze this dip, it does not hold up well in the freezer. Try to make it as close to the event as possible, because it’s much better fresh!
